Growing up and training in Lyon, the culinary capital of France, he has worked for some impressive chefs such as Chef Jean Paul Lacombe, 2 star Michelin, Leon de Lyon; and 2 star Michelin Pierre Orsi.  He then traveled to Chicago working for Jean Banchet, at the infamous Le Francais.

Moving to San Francisco, he opened La Folie in 1988 earning accolades as James Beard Award for Best Rising Star chef in 1980, James Beard Best Chef in California 2005 – 2007, Best Food and Best French Restaurant in Zagat in 2002, Best French Restaurant in 7x7 Magazine, 4 star by the San Francisco Magazine, Top 100 Restaurant in San Francisco Chronicle and 4 star by the San Francisco Chronicle and a 1 star Michelin Star.

After 32 years of prosperity, the decision to close La Folie 2020 was heartfelt but he is enjoying his continued success as Culinary Director and Founder of Vine Dining Hospitality in 1993 which includes Left Bank Larkspur, Left Bank Menlo Park, Left Bank San Jose, Meso San Jose, LB Steak San Jose / Bishop ranch and Petite LB Tiburon and Left Bank Jack London Square.

Also Chef Passot is on the board for Sprouts Chef Training, an Advisory Member of Ment’Or, and member of MCF Maitre Cusiniers de France, ACF Academie Culinary or France.
